Off the Grill
Spicy BBQ Shrimp Skewers
High-Heat Grill
Fast, high-heat cooking is how you use Curley's Spicy on shrimp — the sauce caramelizes in minutes and the heat from the sauce is tempered by the sweetness as it cooks.
How To Make It
- 1
If using wooden skewers, soak in water 30 minutes. Preheat grill to high.
- 2
Toss shrimp with olive oil, garlic, lime juice, and half the Curley's Famous Spicy BBQ Sauce. Marinate 15 minutes — no longer, or the acid will start cooking the shrimp.
- 3
Thread shrimp onto skewers, 4-5 per skewer, threading through both the tail and thick end so they lay flat.
- 4
Grill over high heat 2-3 minutes per side. Shrimp cook fast — pull them when they're pink and just curled into a C shape. A tight O means overcooked.
- 5
Brush with remaining Curley's Spicy sauce immediately off the grill.
- 6
Garnish with fresh cilantro and serve with lime wedges and extra sauce for dipping.
High heat and fast cooking keeps the shrimp tender. The Curley's Spicy glaze goes on after pulling from heat — this gives you the sauce flavor without burning the sugars.
